1 Package of Herb Blend for Fish
2 Pounds of Fresh Tuna Steaks (1" thick, 4 pieces)*
2 Teaspoons Dijon Mustard
2 Tablespoons Mayonnaise
2 Tablespoon Olive Oil, divided
Scallions for Garnish, finely chopped
Pat fish with a paper towel to dry. Mix mustard and mayonnaise and rub on all sides of tuna. Sprinkle half the Herb Blend for fish seasoning on the top of the tuna. Heat cast iron skillet on high. Once the skillet starts to smoke, place the tuna seasoned side down. Decrease heat to medium high. Add remaining seasoning on top and cook for about 1 minute. Turn tuna over using tongs and cook for 1-2 minutes. (If overlooked, tuna will be dry). Remove using tongs and place on a platter. Drizzle 1 Tbsp of olive oil on top. Let rest 10 minutes. Drizzle with remaining Tbsp of olive oil and top with chopped scallions. Serves 4.
*As with all proteins, remove tuna from the refrigerator about 30 minutes prior to preparing.
Suggestion: Serve with rainbow carrots and rice.
