Herbed Flat Iron Steak


Herbed Flat Iron Steak1 Package of Herb Blend for Beef
2 Pounds of Flat Iron Steak*
3 Tablespoons of Olive Oil, divided

Pre-heat oven to 375°. Place the steak on a cutting board and cover with plastic wrap. Using a mallet pound the steak for 1 minute to tenderize. Turn steak over and pound on the other side for another minute. Cut the steak in half and place the pieces in a 9 X 13 glass baking dish. Drizzle 1 Tbsp of oil over the beef. Pour ½ the seasoning package in your hand and sprinkle evenly over the top of the beef. Pour the remaining seasoning in your hand and again sprinkle evenly over the beef. Gently press the seasoning into the top of the meat. Bake 20 minutes on middle oven rack for medium rare then remove from oven. Drizzle the remaining oil over the beef. Place on a cutting board and let rest for 10 minutes. Slice 1/2'” thick pieces on the diagonal. Drizzle pan juices over beef. Serves 5-6.

*As with all proteins, remove the steak from the refrigerator about 30 minutes prior to preparing. If using a gas oven, check doneness 1-3 minutes earlier. If using only 1 pound of steak, don't cut meat in half, decrease seasoning by half (about 1 Tbsp),  and olive oil by half (1 1/2Tbsp) and cook approximately 16-18 minutes, depending on thickness. 

Serving Ideas: Top beef with blue cheese crumbles and chopped scallions.
