1 Package of Herb Blend for Fish
2 Pounds of Skinless Salmon Filet*
2 Tablespoons of Olive Oil, divided
Pre-heat oven to 400°. Lightly coat a 9 X 13 baking dish with cooking spray. Cut the salmon in 4 equal size pieces. Place salmon in the baking dish. Fold any thin ends under so the salmon will cook evenly. Cut a small slit down the center of each piece (about ¼ of the way through the thickest part of the fish). Drizzle 1 Tbsp of olive oil over the salmon. Pour ½ the seasoning package into your hand and sprinkle evenly over the top of the salmon. Pour the remaining seasoning in your hand and again sprinkle evenly over the top of the fish. Bake on middle rack for 10 minutes then remove from oven. Drizzle the remaining Tbsp of olive oil over the salmon. Let rest 5 minutes. Serves 5-6.
* As with all proteins, remove salmon from the refrigerator about 30 minutes prior to preparing. If using a gas oven, check doneness 1-2 minutes earlier. If using only 1 pound of salmon, decrease seasoning by half (about 1 Tbsp), and olive oil by half (1 Tbsp). Cut the fish into 2 similar size pieces.
Serving suggestions: Serve with lemon wedges over Israeli couscous.
